Beef Frequently asked questions
What are your cattle fed?
They are 100% grass-fed and finished. Our cattle are only fed their mothers’ milk, grass, and hay. They graze on diverse pastures with a variety of grasses and legumes, which significantly improves the taste of our beef by providing a richer, more complex flavor profile due to the different nutrients and botanical compounds the cattle consume.
What breed of cattle do you have?
We have Black Angus and Red/Akaushi Wagyu. We select our genetics to perform well on grass and have excellent marbling. Marbling is the deposit of fat inside the meat that makes steaks tender and delicious. Our beef tends to be graded USDA Choice or Prime, entirely grass-fed and finished.
Is your beef Organic?
We are not organic certified, but we do follow most of the organic practices. We focus on natural processes and sustainable methods, avoiding synthetic inputs like pesticides, herbicides and fertilizers, while promoting soil health, biodiversity, and ecological balance. We never use growth hormones and only use antibiotics in emergency situations (which is rare). Cattle on pasture are not cooped up as they would be in a feedlot where viruses and bacteria are readily passed around. This means that sick animals are a rare occurrence, but when an animal does get sick or injured we will use the appropriate treatments as required by good animal husbandry. It is our job as farmers to provide the best care and attention for our livestock, and we take pride in it.
Why buy beef in bulk?
Buying beef in bulk has a bunch of benefits! First and foremost, You have the utmost control over how your beef is processed and what cuts you receive. Steaks can be cut to your ideal thickness so you get the perfect cut of meat for you and your family, not what sells best at the store. Buying beef in bulk also allows you to support your local farmers. Did you know that according to the USDA, only fourteen cents from each dollar spent on food in America goes to farmers?
Money spent at a local farm stays in the local economy and supports your friends and neighbors. The money you spend with us is then, in turn, spent at local businesses. Buying beef in bulk is also good for the environment! Beef at the grocery store often travels thousands of miles before reaching you. Every single beef we sell was born and raised right here on our farm in Buckeystown, Maryland. It makes a short trip up to our processor in Littlestown, Pennsylvania before returning to Buckeystown for you to pick up.
How big are they when they go to slaughter?
The actual weights vary for each animal, but our target weight is between 1100-1300 lbs live weight. How much of each cut do I get (steaks, hamburger, etc.)?
Cuts will vary based on how you fill out the cut sheet but will generally include 40% ground beef, 30% steaks, and 30% roasts.
How much can I expect to take home?
Whole Beef will typically produce 400-450 lbs of different cuts, which will fill up a 20 cubic foot Freezer. A half beef is 200-225 lbs or a 10 cubic foot freezer, and a quarter beef is 100-115 lbs or a 5-7 cubic foot freezer.
How long do you age the beef?
The processors let the beef dry age for 10-14 days before cutting it. This allows the enzymes that are naturally in the beef to tenderize it and enhance the flavor.
When do I pay?
You will pay a non-refundable deposit when you reserve your beef, and the remaining balance will be due before you pick up your beef.
