What are your hogs fed?
They are fed Non-GMO, soy free grower feed. We purchase our feed from a local farm so everything is grown right here in Maryland.
What breed of hogs do you have?
We have a Berkshire/Poland China cross, both of which are heritage breeds.
What is Heritage Pork?
Heritage livestock are breeds which were traditionally grown before large scale industrial agriculture. Typically, heritage livestock does not grow as quickly as the commercial breeds and is more specialized for the specific climate and conditions of an area. Heritage breeds often have a richer and more developed flavor than commercial pork and offer a unique opportunity for small growers to produce a premium product for the public.
Is the pork organic?
We are not certified organic; however, we never give any growth hormones and have not yet had to administer any medications. Our pigs are healthy and perform well without any inputs apart from feed, water, and fresh air and sunshine.
What is the hanging weight?
Hanging weight is also known as hot carcass weight. Hanging weight is the weight of the carcass when it is placed in the cooler to age. The processor’s fee is based on hanging weight, which is usually around 220lbs.
How much pork can I expect to take home?
Our pigs typically have a hanging weight of around 220 lbs, and the take home weight is about 180 lbs for a whole hog. As a rule of thumb, 35 lbs of meat will take up approximately a cubic foot of freezer space,.so a whole pork will need 5-7 cubic feet of freezer space. A half pork will require 3-4 cubic feet.
When will you have pork shares available?
The pork will be ready for pickup in mid September, but you can put down a deposit and reserve at any time. We suggest that you place your reservation early, given our limited availability. You can reserve your half or whole hog today
Who pays the processing fee?
You will pay the processing fee. This is because the cost can vary considerably based on what cuts you select. Smoking and slicing bacon and hams is an extra Charge as well as some of the sausages.
